So while watching Matilda this morning make her pancakes, I could feel my children’s eyes boring into the side of my face. Then it came ‘mum do you think you could make us some pancakes for breakfast?’ erghhh
We dont start our day with cereals in general. So as Matilda poured her deliciously thick pancake mix into the pan, I began to think ‘how am I going to fool the kids’. I set to work on her tried and tested pancakes and mixed, beat and messed up my kitchen completely but after 25 minutes of work I had produced 10 (only 8 were edible) pancakes ready for their toppings of either sliced banana or honey. As Erin states they are a little tricky and there isn’t any high flying flips to be had with these.
To my surprise, these were actually very tasty and my kids did like them (not love) they finished their plates after I have a couple of bites of theirs. They did ask why they were funny tasting and so I was rumbled. But full tummies and not a ‘Don’t make those again mummy’ comment so it was a Sunday morning win!
